Sometimes you are just in a mood for a piece of cake or cupcake, am I right? Well, for my husband and myself, this is like all day every day. I always try to keep something sweet on hand for him to snack on when the moment comes.
John fell a few weeks ago playing football for PT in the morning. Wet grass, running fast, and shoes with little traction were not on his side that morning. He slipped on the grass and tired to catch himself on the way down and landed perfectly on his wrist. Broken – Ouch! I have never ever broken a bone but for John, this was his fifth… yes I said fifth. The guy needs a bone density scan if you ask me. He called me perfectly calm and let me know what happened. Poor guy, he found out later that day he was going to need surgery.
So, with that being said, I wanted to do something nice for him. Since he would be laid up in bed for a while, I figured he needed something sweet. To you know…help ease the pain, or gain a pound or ten. I found an idea awhile back on Pinterest, it was how to make a bakery style cake from a box. I figured it was time to break this trick out again. I have used this quite a few times now with much success. It is super easy and not time consuming at all.
The Trick
– Add one more egg than the box calls for (or add two additional if you want it to be really rich)
-Add 2 teaspoons vanilla
– Double the oil amount, but use real melted butter instead of oil
– Use milk instead of water
Mix and prepare the cake according to the directions on the box!
As a side note, I have also found that baking the cake at a lower temperature works wonders. The box normally asks for 350, I go with 325 and add a few minutes.
